After a tough day at school, don't be surprised if your child does not want milk. These treats are a great healthy alternative

Oatmeal and Buttermilk Tea Cake

Ingredients

1 cup rolled oats + 2 tbsp
11/4 cups buttermilku00a0u00a0u00a0
1 cup butteru00a0u00a0u00a0u00a0
1/2 cup brown sugar + 2 tbsp
1 cup refined flour (maida)u00a0u00a0
11/2 tsp baking powderu00a0u00a0
1 tsp baking sodau00a0u00a0u00a0
1/2 cup raisins


Method
Preheat an oven to 180u00baC. Grease an eight-inch cake tin.
Take the butter in a bowl and soften it. Add half cup brown sugar and cream till light and fluffy.
Sift refined flour, baking powder and baking soda and add to the butter mixture. Add one cup oats and buttermilk and mix. Add raisins and mix.
Transfer the batter into the greased tin. Sprinkle two tbsp oats on top followed by two tbsp brown sugar.
Bake in the preheated oven for 15 minutes. Lower the temperature to 160u00baC and bake further for 25 minutes.
Set aside to cool. Slice and serve.

Ingredients

1 banana, choppedu00a0u00a0u00a0u00a0
1 medium pear, choppedu00a0u00a0u00a0u00a0u00a0
10-15 almonds, blanchedu00a0u00a0u00a0u00a0
2 cups chilled milku00a0u00a0u00a0u00a0
1/4 medium watermelon, choppedu00a0u00a0u00a0
4 tbsp yogurtu00a0u00a0u00a0u00a0u00a0u00a0
4 tbsp strawberry jamu00a0u00a0u00a0
1 cup crushed ice


Method
Take banana, pear, almonds and milk in a smoothie maker and blend till smooth.
Add melon, yogurt and strawberry jam and blend again till smooth.
Add crushed ice and blend once more.
Pour into glasses and serve immediately.

Garden Vegetable Rollu00a0

Ingredients

8 lettuce leaves, roughly torn
2 large tomatoes, thinly sliced
2 large cucumbers, thinly sliced
4 wholewheat hot dog rolls
2 tbsp butter
2 tbsp mustard paste
8-10 black peppercorns, freshly ground
Salt to taste
Thousand Island Dressing
4 tbsp eggless mayonnaise
1 tbsp tomato ketchup
1 tsp Tabasco sauce
1 jalapeno, chopped
1 pickled onion, chopped
1 pickled gherkin, chopped

To prepare the Thousand Island dressing, mix all the ingredients well.
Slit hot dog buns without cutting through. Spread a little butter on both the sides.
Arrange lettuce, cucumber and tomato slices evenly on one half of each roll. Sprinkle a little salt and ground black peppercorns.
Drizzle a little mustard paste and Thousand Island dressing. Cover with the second half and serve immediately.

Creamy Chicken Loaf

Ingredients

4 boneless chicken breasts, boiled and sliced thicklyu00a0
8-10 brown bread slicesu00a0u00a0u00a0u00a0u00a02 tbsp oilu00a0u00a0u00a0u00a0u00a0u00a0u00a0
1 medium onion, choppedu00a0u00a0u00a0u00a0u00a0
2-3 garlic cloves, choppedu00a0u00a0u00a0u00a0u00a0
2 medium potatoes, boiled and slicedu00a0u00a0u00a01 cup white sauceu00a0u00a0u00a0u00a0u00a0u00a0
10-12 toasted almonds, flakedu00a0u00a0u00a0u00a0
u00bd cup milku00a0u00a0u00a0u00a0u00a0u00a0

Salt to taste

Method
Preheat oven to 180u00baC. Grease a loaf tin lightly.
Place the brown bread slices in it in a manner so that the sides and the base of the tin is covered with them.
Heat oil in a pan. Add garlic and onion and saute till golden.
Place potato slices at the base of the loaf tin in a layer.u00a0 Over that place the chicken slices similarly.
Take white sauce in a bowl, add the sauteed onion-garlic and mix well. Spread some of this mixture over the chicken.u00a0
Place another layer of potato slices and chicken slices.u00a0 Sprinkle toasted almond flakes over.
Add a quarter cup of milk to the white sauce along with an egg and salt and mix well. Pour some of this over the almonds. Fold the top edges of the bread slices over.u00a0

Spread this over the bread. Place the loaf tin in the preheated oven and bake for 20 minutes.
Take it out of the oven and cool slightly before unmoulding. Cut into slices and serve.
