Home-style mixed vegetable soup

Ingredients
>>2 medium carrots, dicedu00a0u00a0u00a0u00a0u00a0
>>1 medium potato, dicedu00a0u00a0u00a0u00a0u00a0
>>100 gms bottle gourd (doodhi/lauki), dicedu00a0u00a0
>>4 medium tomatoes, quarteredu00a0u00a0u00a0
>>1 tbsp oilu00a0u00a0u00a0u00a0u00a0u00a0
>>1/2 tsp cumin seedsu00a0u00a0u00a0u00a0
>>7-8 black peppercornsu00a0u00a0u00a0u00a0
>>1 medium onion, thickly slicedu00a0u00a0u00a0
>>Salt to tasteu00a0u00a0u00a0u00a0u00a0u00a0
>>1/2 tsp sugaru00a0u00a0


Method
>>Heat one tablespoon oil in a pan. Add cumin seeds and peppercorns. When the cumin seeds begin to change colour add onion and sautu00e9 for two minutes.
>>Add carrots, potato, bottle gourd and stir. Add salt and mix.
>>Add two cups of water, cover and cook till nearly done. Add tomatoes and continue to cook, covered, till all the vegetables are completely cooked.
>>Strain and reserve the liquid. Cool the vegetables and then puree in a blender.u00a0
>>Transfer into a deep pan, add the reserved liquid and adjust consistency. It should be quite thick.
>>Bring the soup to a boil. Adjust salt, add sugar and stir.
>>Serve hot.

Sprouted moong khichdi

Ingredients

>>1 1/2 cups sprouted green gram (ankurit moong)
>>1 1/2 cups rice, soakedu00a0u00a0
>>1 tsp pure gheeu00a0u00a0u00a0u00a0
>>1 tsp cumin seedsu00a0u00a0u00a0u00a0
>>1 inch stick cinnamonu00a0u00a0u00a0u00a0
>>3-4 green chillies, slitu00a0u00a0u00a0u00a0
>>4-6 cauliflower florets
>>1 medium carrot, cut into strips
>>1/2 tsp turmeric powderu00a0u00a0u00a0
>>10-12 black peppercorns, crushedu00a0u00a0
>>Salt to taste


Method

Peel and chop raw mango finely. Put it in a bowl. Chop onion finely.u00a0 Halve tomato, remove seeds and chop and add both to the bowl. Add masala boondi, mint sev and chaat masala.u00a0
>>Add coriander leaves, mint leaves and mix everything well. Add green chutney, sweet tamarind chutney and lemon juice.u00a0 Mix well. Add pomegranate pearls and mix. Serve immediately.

>>4 sheets aluminium foilu00a0u00a0u00a0

Method
>>
Preheat oven to 180 u00baC.
>>Take rice in a pan, add milk and cook till rice is soft.u00a0
>>Add sugar and green cardamom powder and cook till thick. Set aside to cool.
>>Transfer the kheer into a deep bowl. Fold in half cup whipped cream and most of the rose petals. Add two >>tablespoons rose syrup and mix.
>>Put the kheer in stemmed glasses and chill.
>>Put the remaining whipped cream in a piping bag and pipe rosettes on top of the kheer in each glass.
>>Drizzle a little rose syrup over it, place a rose petal on top and serve chilled.

Sweet bread pizza

Ingredients

>>4 slices of brown bread
>>1 1/2 tbsp butter
>>1 cup mixed fruits, cubed (apple, strawberry, mango)
>>1 tbsp icing sugar
>>Pinch of cardamom powder
>>Pinch of cinnamon powder
>>1 tbsp mix fruit jam
>>150 gms cottage cheese (paneer)
>>1 tbsp chopped candied fruits
>>4 tbsp of strawberry syrup

Method
>>Cut the bread slices in round shapes with a cookie cutter. Apply butter on both sides of bread slices. Toast them in a non-stick pan till golden brown. Set them aside.u00a0
>>Heat half tablespoon butter in a pan, add the mixed fruits and sautu00e9 for two minutes.u00a0u00a0 Add icing sugar, cinnamon and cardamom powder and mix.
>>Apply a thin layer of jam on one side of the roasted bread slices. Place mixed fruit mixture evenly on each slice. Grate the paneer on the fruits. Sprinkle chopped candied fruits over the paneer.
>>Drizzle strawberry syrup on the top. Cut each pizza into half and serve.
