Alcoholic infusions are enjoying their moment under the spotlight, with everything from fruits to herbs making their way into infused drinks. The K-Pop at The Fatty Bao, however, takes the trend a step further by infusing whisky with our favourite movie snack -- popcorn. Making this cocktail even more oddball are the spicy wasabi syrup and Earl Grey bitters.

Salad days

The Rocket Martini, which will be on Indigo’s new menu from May 26, combines healthy eating with a splash of good ol’ alcohol. Conceptualised by Lokesh Buddha, who helms the bar, this drink is a combination of vodka, rocket leaves, mustard paste and fresh lime juice. Think of it as a light salad you can sip on.

Stick to your roots

If you’ve only ever eaten beetroot in a salad, it’s time to try something new. Root Benefits is an earthy cocktail made by mixing fresh beetroot juice with homemade vanilla sugar. The refreshing, flavourful, blood red drink has gin and is served with a basil sprig -- from Verbena’s in house garden -- stuffed in a Thai lime.

Kale and hearty

The Kale and Gin Coupe is a part of the recently launched summer cocktail menu at Woodside Inn’s Colaba outpost. The refreshing drink features gin, sparkling wine, elderflower cordial, fresh lime, and the superfood everyone raves about -- kale. Bar manager Bharat Sharma says he wanted the drink to be fun -- hence, the sparkling wine -- and nutritious at the same time.

Breakfast in bed

Ever thought of having a drink with breakfast? Now you can have a breakfast-inspired cocktail instead. Sunny Side Up features Bailey’s served in a cookie shot glass accompanied by a molecular sunny side up made with fresh cream, vodka, Malibu and mango puree forming the dessert cocktail. You can mop it up with soft Banana Bread. The Sunny Side Up has been on the menu of Butters The Tipsy Gastropub since its launch last month. The dessert cocktail was created by Chingy Patel, head chef and co-founder.
