Three ways with... cherries

Here are innovative ways to boost your cherry-intake:

Freeze it
Puree 18 fresh, pitted cherries and six fresh pineapple rings with one tablespoon of sugar. Freeze this puree in kulfi moulds, with a small wooden stick in each, for about three hours. The Cherry Pineapple popsicles are ready.

Add it to cookie dough

In a large bowl, blend one cup margarine, half a cup of sugar and one cup brown sugar until creamy. Add two eggs and one teaspoon of vanilla essence and beat well. Add one-and-a-half cups of flour, one teaspoon baking powder and some salt (optional). Stir two cups of quick-cooking oats and one-and-a-half cups of dried cherries. Make medium-sized cookies and bake them for 10 to 12 minutes in a pre-heated oven set to 350 degrees Fahrenheit for delicious cherry oatmeal cookies.

Eat it with cheese
Try this cherry chutney with fresh goat cheese or brie cheese. Place 450 gm pitted cherries, one cup cider vinegar, half a cup of rice vinegar, one large chopped onion, half a cup (each) of white and brown sugar, two tablespoons minced fresh ginger, two tablespoons Chinese five-spice powder, one teaspoon salt and one-fourth of a teaspoon nutmeg in a large pot.

Simmer over medium-high heat then reduce heat to medium-low. Cover the pot and simmer for an hour, stirring occasionally. Remove the lid, and continue simmering until the desired consistency has been reached. Serve chilled.

Cherries are back in season and behind their sensuous red exteriors lie a host of nutritive benefits.

Anthocyanins or flavonoid pigments found in red and purplish fruits and veggies, including cherries have key antioxidants that reduce pain and inflammation, resulting from conditions like rheumatoid arthritis, while their high melatonin content boosts immunity.

Anthocyanins are also antioxidants, and are being studied for a variety of potential health benefits. Cherries have a water content of 86% and 0% fat, they also have vitamins A and C, and carry traces of Vitamins B1, B2 and B6.
