Whether it's green tea or kahawa, there's plenty brewing at chai counters in the city

Beer bars are for those who want to unwind over the weekend. Coffee joints are for those long hours of intense conversation. So, where does that leave chai enthusiasts? There are a few thoughtful people out there who are reinventing tea drinking with exquisite rituals of tea brewing and sipping.

The Leela Galleria has an amazing repertory of flavours at the Cha Bar. The menu has 10 pages of different teas that you can choose from. And the best part here is you can grab a book from the bookstore inside where the Cha Bar is housed, and spend a blissful afternoon.

Gaurav Saria, owner of Infinitea, which offers teas ranging from Rs 30 a cup to Rs 100 a pot, says, "People are trying out new varieties of tea. I'm quite happy with the response. We offer ice tea, masala tea, Darjeeling tea and green tea. We also have kahawa, which is Kashmiri chai."

On request, Infinitea does tea evenings. And, on weekends, they serve a hearty Continental breakfast.

The T Place at Koramangala, which will open very soon, promises to serve tea in new ways in contemporary settings.

I love to drink green tea, which is very healthy. I can't do without my morning tea, which I make with milk and sugar. Otherwise, it's always chamomile tea, without sugar and milk

>>Wide kettles allow tealeaves to spread and brew. Tea leaves need space to swell, and unfurl.
>>If you are using a tea bag, let it steep in hot water for at least three minutes, and if you are using tealeaves, steep for five minute.
>>Darjeeling tea is best savoured without any add-ons like sugar and milk. Use honey or a squeeze of lime instead.
>>Tea drinking is all about creating the right atmosphere. Use good China and porcelain cups, delicate tea strainers, doilies, tea tongs, tea timers and a big-hearted teapot.
