Gurdeep Punjj, who hosts ABC — All 'Bout Cooking on Zee Khana Khazana, explains the virtues of simple, healthy homemade food

Gurdeep Punjj, a popular face on the small screen, tries to debunk such myths in her new show ABC — All ’Bout Cooking on Zee Khana Khazana.

In each episode, she takes an ingredient and then prepares three dishes with it. The recipes are easy to make and can be prepared in a jiffy. She explains, “Despite a plethora of recipes available on the Internet, many professionals are not too eager to cook and stay away from the kitchen. Punjj says that her love for cooking comes in handy while hosting the show. “I’m quite familiar with the ingredients and am actively involved in the back kitchen while brainstorming with my chef about which recipes to feature on the show. For instance, I had tasted Gobi Musallam earlier and really liked it. But it is considered as a difficult dish to cook. So I thought why don’t we feature it on the show.”
At home, she likes to rustle up healthy meals using less oil and enjoys making desserts. “I try to make healthy cheesecakes and replace flour with wheat when it comes to pastas and noodles. On this show, we have replaced sugar with sugarcane juice in a couple of recipes as the latter is a much healthier option,” she adds.
Eek Ka Paratha (Paratha with sugarcane juice)
For the dough
>> ½ cup millet (bajra) flour
>> 4-5 tsp sugarcane juice
>> Salt to taste
For the filling
>> 3-4 tbsp boiled and mashed sweet potato
z 1 tsp finely chopped green chillies
>> 1 tsp finely chopped mint leaves
>> 1 tsp finely chopped coriander leaves
>> 2-3 tsp finely chopped onions
>> ½ tsp red chilli powder
>> ½ tsp chat masala
>> ½ tsp desi ghee
>> Salt to taste
For the garnish
>> Mint leaves
>> In a bowl, add the flour, sugarcane juice, salt and make a dough out of it
>> In another bowl, add the sweet potato, green chillies, mint leaves, coriander leaves, onions, salt, red chilli powder and chat masala and mix it well.
>> Take some dough, fill in some mixture into it and roll into parathas
>> In a pan, add ghee and cook the paratha.
