Get your share of the sandwich

Straight from the Middle East

Ingredients:
Hummus (chickpea spread), tabouleh (parsley, tomato and cracked wheat salad), pita bread

Preparation:
Spread  some hummus and tabouleh in the centre of the pita and roll it up.

Nutritional benefits:
Chick peas:  Protein, Vitamin B and fibre. Parsley: Fibre, calcium and Vitamin C. Tomato: Vitamin C.

The fourth Earl of Sandwich was a hardened gambler, who gambled away for hours at a particular
restaurant. Since he did not want to disrupt his game at mealtimes, he ordered his valet to bring him meat tucked between two pieces of bread. And because of his title, other customers who wanted the same dish started ordering  "the same as Sandwich!"


Mexican Tofu Wraps
 
Ingredients:
1 tbsp fresh lime juice, sunflower oil, firm tofu, onion, fresh cilantro, crushed garlic, low fat flour tortilla (available at Rajat Stores at Nepeansea Road, and Crawford Market shops), lettuce and salsa.

Preparation:
Mix lime juice and oil. Drain and pat tofu dry. Toss crumbled tofu, onion, cilantro and garlic in the lime juice and oil mixture. Add salt and pepper. Let it marinate for about 20 minutes. Preheat oven to 350°F. Wrap the tortilla in foil. Place in oven for about 10 minutes. Put a layer of lettuce down the centre of the tortilla. Top with tofu mixture. Spoon salsa on top and roll up. Eat while hot.

Nutritional benefits:
Sunflower oil: Helps lower bad cholesterol level. Tofu: High protein, produces oestrogen. Salsa: Its contents provide a mixture of Vitamins A, B and C.

Ingredients:
Whole grain or herb bread, mayonnaise, tomato, lettuce and cucumber.

Preparation:
Toast the bread and layer ingredients on top.

Nutritional benefits:
Cucumber: High mineral content and valuable source of potassium.  Sprouts: Loaded with vitamins. Tomato: Rich source of Vitamin C and contains small amounts of Vitamin B. Bread: Fibre, great source of complex carbohydrates which release energy. Lettuce: Rich source of Vitamin C and calcium.


Why all breads are good for you

* Wholemeal bread contains 3 times as much fibre as white bread.
* White bread in turn, contains twice as much calcium as wholemeal bread.
* Granary, pita, ciabatta, foccaccia, naan and bagels are great to experiment with and are not fattening if eaten with the correct accompaniment.
* Aside from these specific benefits, all breads are high in iron and Vitamin B.
