It's always a pleasure to walk into the bustling Diner once you're done with the mental masturbation in IHC's many halls. Or have walked endlessly around its greens, only to crave for some on your plate. And of course, some cool. The All American Diner's Summer Soups & Salads fest does justice to both.u00a0u00a0u00a0u00a0u00a0u00a0

Turning a new leaf
You might have to perch atop their bar stools for a bit before a suitable seat empties itself, but the treat is well worth the wait. And when head chef Dhruv Sarkar decides to chat about everything from his favourite customers to comparing cuisines that work in New York and New Delhi, that bit's a breeze. Before you know it, you're on their cushy red couches, with band boys in the seat before you, and an expat couple behind. The tiny special menu stands upright, supported by a glass stand. The surprises it has, however, are big and bright.
In their chilled soup servings, we loved rich chicken and fresh fennel leaves, the latter lingering on long after you've slurped it all. The roasted pumpkin and tender ginger broth is comes next, with its creative blend and soothing flavours - each so smoothly in sync, it's difficult to make out what's more and what's less.
"We make strained stock right in the morning, since it's to be cooled and served all day long," says executive chef Rajiv Kumar Malhotra. And your cup plate comes crowded with colour-sprinkled ice cubes to keep the coolth intact.
Those who like it sweet can opt for light mint yoghurt with honeydew, watermelon and cantaloupes or fresh riped tomato and leek, all served with refreshing peppermint bread instead of deadpan soup-sticks.
In salads, we suggest you begin with traditional prawn cocktail on crisp iceberg lettuce, as classic as it gets. The prawns are perfectly pre-peeled, and tender to the point you like it. No less, no more. Herbivores, on the other hand, can feast on a bowl of shell-shaped Riscossa pasta, artichoke heart, cherry tomatoes and honey mustard dressing. A relief from the Caesars and Greeks you've overdone.
The Scottish smoked Salmon, filo wrapped asparagus tips, capers, olives, onion rings and crushed black peppers plate, on the other hand, might appear a tad tricky at first, with the pinkies coiled neatly at the four ends, as if tomato or carrot garnish. But one bite, and you're bitten. The framed pop music art on the wall, too, acts as a delicious pastime. Get high on health and devour the divine spread before it's over for good.
