Irish creme and dark chocolate
This one had us drooling — Irish creme infused with flavour-aged Chivas (18 years). It takes about seven hours to make a batch of Irish creme along with 48 hours of aging. We lapped this up in minutes, though.

Gianduja chocolateice cream with raspberry sorbet
We first tried a Gianduja soup at a masterclass by London-based baker Shaheen Peerbhai, and became instant fans of the sweet chocolate spread containing hazelnut paste. It was invented in Turin during Napoléon Bonaparte's regency. This rare chocolate ice cream paired with a creamy raspberry sorbet is fit for a king.

Prune & armagnac ice cream
With cream as base, chef Marzbaan Amroliwala adds prunes soaked in brandy. This one is a double high with spirit and sugar going hand-in-hand.

Truffle ice cream
Japanese food comes closest to umami, and this ice cream packs a punch with truffle salt, truffle oil, fresh Burgundy truffle and hazelnut. It adds texture and sweetness with a garnish of a rice-flour sweet called dango cooked with white sesame and soy reductions.
