It would come as no surprise to Gladwell to learn that 23 year-old pastry chef Pooja Dhingra hails from a family of cooks.

Pooja, who studied Law for a while, marvels at the prophetic messages penned by classmates in her craft book the year she graduated. "So many wrote that they can't wait for me to start my own restaurant," she shares.

"I would bake back then too to give mum a hand or make treats for classmates, but at the time I had neither planned to enroll in the Swiss catering school (I later joined), nor any idea that I might attend Le Cordon Bleu in France."

With Le 15 P ufffdtisserie, Pooja hopes to recreate a bit of France in Mumbai. Named after the administrative district of Paris where Pooja resided and which, she says, "is not as tourist-centric as the rest of the city," the pastry shop has the most exquisite Lemon, Hazelnut, Rose, Caramel and Chocolate Macaroons (Rs 50 per piece), but it's the chai, paan, passion-fruit and wasabi flavours that we'd recommend for more adventurous food-lovers.

And if you enjoy fruit, try the light and creamy Mango Tart (Rs 550 for a medium size cake) and the chocolate-banana-caramel-tart (Rs 120 per piece). Moderately sweet, both desserts allow you to savour the natural flavours of each ingredient.

Croissants, Mini Quiches, Hazelnut and Belgian Chocolate Cups, lip-smacking-albeit-healthy Granola Bars (Rs 40) and an assortment of Cupcakes (Rs 30-Rs 35) and teacakes are some of the other treats for sale, alongside sandwiches and dips.

Pooja also takes orders and will customise dishes to accommodate individual preferences or health conditions. At Rs 350 per head, Pooja also organises about seven varieties of sweet as well as savoury finger-foods for parties.

And, if you'd like to hire servers for your event, Pooja can organise this as well. Additionally, at their central kitchen in Lower Parel, Pooja organises international cooking workshops (Rs 1,000 onwards) for adults as well as children.

Her July schedule includes a workshop in molecular gastronomy conducted by a chef who has worked at several 3-Michelin-star restaurants. Globally, only 81 restaurants have been awarded a 3-Michelin-star rating.
