Ingredients

1 cup pistachios,
blanched and coarsely chopped u00a0u00a0
8 racks of lamb,
2 bones in each pieceu00a04-5 garlic cloves,
finely choppedu00a0u00a0u00c2u00bd tsp chopped fresh rosemaryu00a0u00a0
8-10 black peppercorns, crushedu00a0u00a0Salt to tasteu00a0u00a0u00a0u00a0
2 onions, roughly slicedu00a0u00a0
2 whole pods garlic, cloves separatedu00a0
u00a0u00a0u00a0u00a0u00a0
Method

Preheat the oven to 220 deegrees celcius.

Loosen the mutton off the ribs and gently dab with the back of a knife. Take the chops in a bowl, add garlic, rosemary, black peppercorns and salt and let it marinate in the refrigerator for one hour.

Spread the pistachios in a plate. Roll the chops in it and press gently. Fold the loosened end.

Spread the onions in a baking tray.u00a0

Take two chops, interlock the bones and place over the onions. Similarly use up the other chops. Sprinkle a little salt and keep the tray in the oven and cook for 10 minutes at 220 u00c2u00baC.u00a0

Spread the garlic cloves in the tray all around the chops, pour one cup of water, cover with a foil. Reduce the temperature to 160 u00c2u00baC and cook for 35-40 minutes.

Open the foil and serve hot.
