This August, Peshwa Pavilion at ITC Maratha brings together the celebrations of Independence Day and Parsi New Year with One Nation, Many Flavours. The festive experience combines India's diverse regional cuisine with cherished Parsi classics, complemented by traditional welcomes, festive live stations, and special offers for diners.
The lavish spread features regional favourites such as Amritsari Chole Kulche, Goan Prawn Curry, Chicken Chettinad, Kashmiri Rogan Josh, and Hyderabadi Subz Biryani, alongside authentic Parsi New Year specialities including Sali Boti, Patra Ni Machhi, and Mawa Cake. Guests can also indulge at the vibrant Tricolour Chaat & Dessert Station, celebrating the colours and flavours of the nation.
Adding to the festive spirit, every table will be welcomed with the traditional Parsi custom of rosewater spraying and a complimentary glass of Falooda or Raspberry Soda, offering guests an authentic Navroz experience.

Celebrating the rich gastronomic traditions of Kashmir, Punjab, Delhi, and Rajasthan, the week-long celebration brings together authentic regional recipes, time-honoured cooking techniques, and iconic dishes that have shaped India's diverse culinary landscape.
The journey begins with Kashmir Wazwan Evenings on August 14 and 15, where guests can savour the elegance of Kashmir's celebrated royal feast. The menu features signature Wazwan delicacies including Rogan Josh, Gosht Yakhni, Rista, Dum Aloo Kashmiri, Nadru Yakhni, and fragrant Kashmiri Pulao, complemented by freshly brewed Kahwa poured from a traditional samovar, recreating the warmth and hospitality of a Kashmiri gathering.
On August 16 to 17, the festival moves to the bustling highways of Punjab with the Punjabi Dhaba Festival, celebrating bold flavours and generous hospitality. Diners can begin their meal with a refreshing Duet of Melons with Mint and Feta salad, followed by the aromatic Saffron Vegetable Shorba. The feast continues with signature favourites including Dahi ke Kebab, Murgh Reshmi Tikka, Subz Handi, the ever-popular Murgh Makhani, and the robust flavours of Rogan Josh. To conclude the celebration on a sweet note, guests can indulge in the timeless pairing of Jalebi with Rabri, a dessert that perfectly captures the joy of festive Indian dining.

Continuing tradition
Continuing their 11 year long tradition, The Bombay Canteen is hosting its annual 'Independence Day Daawat', a community-style lunch, where a spread of regional Indian delicacies will be served on traditional banana leaves. Staying true to the spirit of the day, diners are invited to pay as they like, with every contribution going towards a larger purpose. Continuing our pledge to “Make Mumbai Green Again” in collaboration with WRI India and Nature:re, collectively helping Mumbai’s journey towards achieving 40 per cent green cover by 2030.
The feast begins with a smoky Baingan Chokha from Bihar, followed by Bilahi Doi from Assam, Panchmel Dal from Rajasthan and Chole Cho Ros from Kashmir among the highlights. The menu also features The menu also features the Kashmiri Dum Aloo, Pumpkin Rezala inspired by Bengal, and Madurai Chicken Kurma from Tamil Nadu too. The feast is accompanied by fragrant Ghee Rice and soft, buttery Maska Pao along with Marwari Papad Chura from Rajasthan, crisp Murukku from Tamil Nadu, fluffy Dhokla and a vibrant Muthiya Chaat from Gujarat.
The spread is rounded off with Tender Mango Pickle, Raw Papaya Chutney, a refreshing glass of Kokum Sharbat, and a sweet finale from Bombay Sweet Shop with the Tiranga Barfi and an indulgent Kaju Chocolate Barfi.
