Southern sojourn This Onam, The Tanjore Tiffin Room  is laying out its table the traditional way on a banana leaf with 30 dishes, and a meal meant to be eaten together by courses.
Running across August 26, 27 and 28, the Sadhya brings the festival's full ceremony to the table: rice at the centre, curries arranged around it, each dish added in its own order and eaten in its own way. The spread draws from Onam's oldest customs, with Sambar, Rasam, Avial, Olan and Kaalan forming the heart of the meal, alongside thorans and pachadis like Beetroot Thayir Pachadi and Beans Thoran for texture and bite. The leaf closes, as it always does, with Payasam served two ways, the milky Pal Payasam and the jaggery-rich Sharkara Adapradhaman.
Rounding out the leaf are the smaller, no-less-important details of a Sadhya: crisp upperi and fried accompaniments such as Sharkara Upperi and Pazhampori, and the sharp, tangy notes of Puli Inji, raw mango pickle, papadam and curd, the accompaniments that give the meal its balance.
