For Mansi Jasani, a 32-year-old turophile and founder of The Cheese Collective, the turning point came at the end of a three-day boot camp at a cheese store she would later intern at in New York. At the camp, participants spent their time making, tasting and learning all about cheese, and it involved 75 varieties. "At the end of it, everyone was sick of cheese, but I could still eat more," says Jasani. "That was sort of the turning point in my life when I realised that I need to be in this industry," she adds.
