After a tough day at school, don't be surprised if your child does not want milk. These treats are a great healthy alternative
Oatmeal and Buttermilk Tea Cake
Ingredients
1 cup rolled oats + 2 tbsp
11/4 cups buttermilku00a0u00a0u00a0
1 cup butteru00a0u00a0u00a0u00a0
1/2 cup brown sugar + 2 tbsp
1 cup refined flour (maida)u00a0u00a0
11/2 tsp baking powderu00a0u00a0
1 tsp baking sodau00a0u00a0u00a0
1/2 cup raisins
Method
Preheat an oven to 180u00baC. Grease an eight-inch cake tin.
Take the butter in a bowl and soften it. Add half cup brown sugar and cream till light and fluffy.
Sift refined flour, baking powder and baking soda and add to the butter mixture. Add one cup oats and buttermilk and mix. Add raisins and mix.
Transfer the batter into the greased tin. Sprinkle two tbsp oats on top followed by two tbsp brown sugar.
Bake in the preheated oven for 15 minutes. Lower the temperature to 160u00baC and bake further for 25 minutes.
Set aside to cool. Slice and serve.
