There’s much to be discovered still. For example, a recipe for a personal childhood favourite of this writer — khaariya paired with Athane ki mirchi or even some lesua ka achaar. For the cold winters, try some bajri ka kheechda or makki ki ghaat, dishes that are incomplete without ghee and some curd. And for some sabzis that have little to no actual sabzis in them, try haldi ki sabzi, pithod ki sabzi, or papad-badi ki sabzi. Lastly, if you’ve squeezed every recipe out of this book, this writer would personally recommend — and hear this with an open heart — gulab jamun ki sabzi.
