Pollen is a cocktail that plays with contrast and finesse. It combines 45 ml of gin with 15 ml of extra-dry Martini, subtly sharpened by a single drop of Angostura bitters. Guava super juice brings a soft tropical brightness, while white pep-per syrup adds a gentle warmth and lift. Shaken and double-strained, the drink is delicately finished with a vanilla wood spray and garnished with bamboo leaves and flowers.

Vegan foamer lends a soft, silky texture, while a pinch of chaat masala introduces a subtle savoury edge that sets the drink apart.
