Devdutt PattanaikHindus who claim to be Satvik are those who believe avoiding meat makes them pure. However, the word Satvik is not Ayurvedic. And Bhagavad Gita does not connect it with any particular food category. This idea that vegetarian food is Satvik is a later invention, maybe 1000 years old, roughly when the Bhagavata Purana became the main text of the Vaishnava. In the Govardhan episode of the Harivamsha, on Krishna’s instructions, buffaloes are killed for food at the three-day mountain festival that Krishna introduces, and the cowherds feast on seasoned meat with rice. This reference to meat eating is also found in Vishnu Purana. Harivamsa and Vishnu Purana are about 1600 years old, when the Gupta kingdom rose and the earliest temples to Vishnu emerged near the Yamuna river.
