What is Christmas without traditional food? Try to make some traditional dish at home this festive season and surprise your guests. Christmas feast is incomplete without Plum cake and Yule Log. Worry not, all you need are some basic ingredients to make these exotic sweet dishes. Popular Mumbai Chef, Kamlesh Rawat tells you how to make Plum cake and Yule Log.  Plum Cake
Ingredients: 1. &frac14; cup finely chopped raisins 2. &frac14; cup finely chopped cranberries 3. &frac14; cup finely chopped figs 4. &frac14; cup finely chopped cherries 5. &frac14; cup finely chopped apricot 6. &frac14;cup finely chopped seedless dry dates 7. 1 cup grape juice / apple juice or (you can also use any alcohol) Fruitcake batter: 1. 1 &frac14; cups water 2. 1 cup sugar 3. 2 cups plain all-purpose flour 4. 1 tablespoon baking powder 5. &frac12; tablespoon cinnamon powder 6. &frac14; tablespoon nutmeg powder 7. &frac12; tablespoon cardamom powder 8. 1 tablespoon vanilla extract/vanilla essence 9. &frac12; tablespoon orange zest 10. &frac14; tablespoon almonds/badam, finely chopped 11. &frac14; tablespoon walnut 12. A pinch of salt
Method: Step 1 - Soak dry fruits in fruit juice or alcohol for two days prior to baking Step 2 - Make a mixture of all-purpose flour, baking powder, cinnamon powder, nutmeg powder, cardamom powder and salt in a bowl Step 3 - Add orange zest and vanilla extract to the mixture Step 4 - Blend the batter until it turns smooth. Add dry fruits, almonds and walnuts to it and blend again Step 5 - Transfer the cake batter into the cake mould Step 6 - Bake at 180 degrees for 40 minutes. Cut the spongy Christmas plum cake into slices and serve to guests.
Christmas Yule Log

1. 6 egg whites 2. 3&frasl;4 cup sugar 3. 1&frasl;3 cup unsweetened cocoa 4. 1 1&frasl;2 teaspoons vanilla essence
For filling 1. 1 1&frasl;2cups rich cream 2. 1&frasl;2cup confectioner sugar 3. 1&frasl;4cup unsweetened cocoa 4. 2teaspoons coffee 5. 1teaspoon vanilla essence 6. Pinch of salt 7. Powder sugar to decorate
Methods: Step 1 - Grease the bottom of a 15x10x1" jelly roll pan; line with waxed paper and grease slightly Step 2 - Preheat oven to 180 degrees. Use an electric mixer bowl to beat egg whites at high speed until soft peaks are formed
Step 3 - Add 1/4 cup sugar and beat it until stiff peaks are formed when beaters are slowly lifted. With the same beater, beat yolks at high speed and add remaining 1/2 cup sugar. Beat until mixture turns thick, or beat for at least 4 minutes.
Step 4 - At low speed, beat cocoa, vanilla and salt until smooth. With wire whisk or rubber spatula, gently fold cocoa mixture into egg whites until blended (no egg whites should show) Step 5 - Spread evenly in pan. Bake for 15 minutes and check for the surface to spring back when gently pressed with fingertip. Step 6 - Shift confectioner's sugar in a 15x10" rectangle on a clean linen towel. Turn the cake out on sugar; lift off the pan and peel paper off cake. Roll up the cake in jelly-roll-fashion, starting with the short end towel. Cool completely on a rack, seam side down. Step 7 &ndash; For filling, combine the ingredients in a medium-sized bowl. Beat with electric mixer until the batter turns thick. Unroll cake and spread with filling. Place, seam side down, on a plate. Cover loosely with foil Step 8 - Chill the cake at least 1 hour before serving. While serving, sprinkle confectioner's sugar over Yule log and decorate with fresh cherry.
