Margarita with a chuski The Chuski Margarita at Farzi Cafe is a classic margarita with an Indian twist. To make it, a raw mango reduction is shaken with tequila, lime juice, and kefir lime leaves. The concoction is then poured into a salt-rimmed margarita glass and served with a popsicle.

All wrapped up "The idea was to make a light dish with mango as the star in a savoury dish, as it is in season," says chef Siddharth Kalyanaraman, who helms the kitchen at NRI. These Mango Rice Wraps use slivers of Alphonso with crunchy bell peppers and cucumber, while the tangy-spicy dip is made with the Badami mango.
