The Eastern Express, a month-long menu at Permit & Co, inspired by the food, ingredients and landscapes of the Northeast and Eastern Himalayas. The menu includes recipes sourced from Nagaland, Manipur and Assam.

“We’ve sourced ingredients like bamboo shoot, also called bastenga locally from Nagaland, yongchak or stink bean pickle from Manipur, bhut jolokia 
(King Chilli or Raja Mircha) from Nagaland, pineapple and timur pepper from Assam, and black rice or Chak-Hao from Manipur. We’ve taken a few liberties with the region’s cuisine, and you’ll see that across the menu,” founder Aditya Hegde tells us.
