Mumbai Food: Burger festival report card reveals more hits than misses

There is something decadent about lobsters. But the filling in this burger is even more so because it does away with the shell, leaving your mouth bursting with the flavours of the succulent meat

Take a quantity of minced beef. Mix an egg and a diced onion into it. Round it up into the shape of a tennis ball and then flatten it out to form a patty. Put that patty in the freezer for half an hour, before cooking it on the hob, on a barbecue or in an oven. And finally, place it between two readymade buns, to complete a straightforward hamburger recipe.
You can, of course, replace the beef with chicken, lamb, pork or, if you really so prefer, aloo tikki. But the folks at Woodside Inn have now taken things a step further at the 11th edition of their annual beer and burger festival. They have scoured the world for the most unusual places to be associated with a burger, and taken inspiration from local ingredients found there to give each of the 11 different fillings an indigenous twist. The result is a cross-continental culinary journey. We hopped on for a brief ride and here is how it went.
