Pista Lamb Chopsu00a0

Ingredients

1 cup pistachios,
blanched and coarsely chopped u00a0u00a0
8 racks of lamb,
2 bones in each pieceu00a04-5 garlic cloves,
finely choppedu00a0u00a0u00c2u00bd tsp chopped fresh rosemaryu00a0u00a0
8-10 black peppercorns, crushedu00a0u00a0Salt to tasteu00a0u00a0u00a0u00a0
2 onions, roughly slicedu00a0u00a0
2 whole pods garlic, cloves separatedu00a0
u00a0u00a0u00a0u00a0u00a0
Method

Preheat the oven to 220 deegrees celcius.

Loosen the mutton off the ribs and gently dab with the back of a knife. Take the chops in a bowl, add garlic, rosemary, black peppercorns and salt and let it marinate in the refrigerator for one hour.

Spread the pistachios in a plate. Roll the chops in it and press gently. Fold the loosened end.

Spread the onions in a baking tray.u00a0

Take two chops, interlock the bones and place over the onions. Similarly use up the other chops. Sprinkle a little salt and keep the tray in the oven and cook for 10 minutes at 220 u00c2u00baC.u00a0

Spread the garlic cloves in the tray all around the chops, pour one cup of water, cover with a foil. Reduce the temperature to 160 u00c2u00baC and cook for 35-40 minutes.

Open the foil and serve hot.

Peanut Sesame Chicken

Ingredients

4 tbsp roasted peanutsu00a0u00a0u00a0
2 tbsp toasted sesame seedsu00a0u00a0
500 gm boneless chicken breasts, cut into stripsu00a0
6 tbsp sesame oilu00a0u00a0u00a0u00a0
3-4 large babycorn, diagonally sliced
5-6 small florets broccoliu00a0u00a0u00a0
1 cup orange juiceu00a0u00a0u00a0u00a0
2 wonton wrappersu00a0u00a0
Salt to tasteu00a0u00a0u00a0
2 tsp soy sauceu00a0u00a0u00a0u00a0
1 tbsp cornflouru00a0u00a0u00a0u00a0
1 small red capsicum, seeded and sliced

Method

Heat two tbsp sesame oil in a wok. Add babycorn and sautu00c3u00a9. Add chicken and continue to sautu00c3u00a9. Add broccoli and orange juice and cook.

Heat the remaining sesame oil in another pan. Roll the wonton strips and further cut them into thin slices. Add it to the pan and fry till crisp.u00a0

Add salt, soy sauce to the chicken and mix. Add cornflour mixed in half a cup of water and add to the chicken along with peanuts and sesame seeds. Mix well.

Add red capsicum and cook on high heat for two minutes.u00a0

Transfer into a serving dish. Top it with fried wonton strips and serve hot.

Ingredients

30-40 cashewnuts

5-6 dried red chilliesu00a0u00a0u00a0
5-6 black peppercornsu00a0u00a0u00a0
1/4 star aniseu00a0u00a0u00a0u00a0
1/2 tsp dry mango powderu00a0u00a0u00a0
Black salt to tasteu00a0u00a0u00a0u00a0
2 tbsp honeyu00a0

Method

Break the dry red chillies, remove seeds and put them in a mixer. Add black peppercorns, star anise, dry mango powder, black salt and grind to a powder.

Roast cashewnuts and almonds. Take the masala powder in a bowl. Add the roasted nuts and mix. Add honey and mix.
Serve.

Method

Heat a pan, add butter and let it melt. Add grated chocolate and stir till it melts.

Add condensed milk and mix. Cook for two to three minutes.

Grease a tray.

Add walnuts to the pan and mix. Add grated khoya, vanilla essence and mix.

Transfer the mixture onto the greased tray and spread evenly. Cool in the refrigerator before cutting into pieces.
