Tufts University researchers discovered that phytoene - a precursor to lycopene in plants - reduced metabolic dysfunction-associated steatotic liver disease in mice.
The condition involves fat buildup in liver cells, leading to inflammation and cirrhosis, and affects up to 38 per cent adults.
This finding helps explain why whole tomato powder often protects the liver better than isolated lycopene, pointing toward potential new dietary strategies for liver health.
