In 2004, Mansoor Khan and his family had the courage to do something that most of us who are chained to our work desks only dream about -- he moved to Coonoor for a life 'where things were more in balance', he writes in his blog. He opened a charming farm, Acres Wild, as a homestay where one can learn how to make organic gourmet cheese.

If the Jerry in you sniffs out cheese and wishes to have his own cheesy moon, head to the Nilgiri Hills in Tamil Nadu where you can help make vegetarian cheeses that carry the flavour of their natural habitat. Sign up for two-day cheesemaking courses at Acres Wild and you can learn how to make hard cheeses like Gouda, Colby, Monterey Jack, Cheddar and Parmesan and advanced varieties includingu00a0 Feta, Haloumi, Mozarella and Camembert. Lessons include theory and practicals. You get to take home the cheese you make.

The 22-acre family-run Acres Wild is located in Coonoor in Tamil Nadu. The basic two-day cheesemaking course costs Rs 5,000 (not including accommodation or food). You can learn to make extra cheeses at the cost of Rs 1,500 per day. The course is open to only those who live on the farm. Rooms cost Rs 2,000 onwards, per couple for a day.
