The grand feast is organised in association with Miracle Foundation India, a non-profit organization that aims to take care of orphan kids by providing them with food, care and education.

The Independence Day special meal comprises of regional delicacies, all of which served on a banana leaf. Chef Thomas Zacharias and his team will bring forth dishes from 12 states including Mangalorean Chicken Curry, Punjabi Smoked Red Pumpkin Bharta, Lucknavi style Soy Kheema Mutter, Kashmiri Simla Mirch, Petha Korma, Kerela Mandeli Fry, seasonal vegetable pulao and lots more. All such innovative dishes will be paired with a selection of unique chutneys and accompaniments. While chilled Aam Panna from Uttar Pradesh will add on to the refreshment, a plate of Tiranga Barfi and Maharashtra's Til Gud Cake will round up the meal.
