Favourite Recipe: Gucchiu00a0Pulao

Ingredients

1 big bowl of gucchi (mushrooms)
1 big sized onion (finely sliced)
1 tsp cumin seeds
1 cup basmati rice
2 tbsp ghee
2 cloves
Salt as per taste
2 green cardamoms
2 badi elaichi (black cardamoms)
2 tej patta (bay leaves)
u00bd tsp turmeric powder
A piece of cinnamon
Finely chopped coriander leaves (to garnish)
u00bd tsp red chilli powder
3 cups wateru00a0

Method

Wash the gucchi well. Cut each gucchi into half, wash the rice and soak for 20 minutes.

Heat ghee in a pot. Add cumin seeds, cloves, cardamoms, tej patta and cinnamon. When they give off a fragrance, add the onions and sautu00e9 till brown. Mix in gucchi and rice. Stir-fry to a light brown colour. Add salt, red chilli powder and turmeric powder. Stir well, add water and boil. Cover the pot and let it simmer on a low flame for about 15 minutes or till done.

Garnishu00a0 with finely chopped coriander leaves. Serve hot.u00a0
