The fragrant basmati rice is layered with saffron, fried onions, cashews, raisins and herbs, giving every spoonful a mix of sweetness, nutty-consistency and spice. Steaming in the banana leaf lends the rice a subtle earthy aroma while keeping it soft and flavourful.
The boondi raita, topped with crunchy boondi and herbs, adds a cooling, creamy contrast. The presentation may draw you in, but the well-seasoned rice makes the potli worth opening.
