Eid al-Adha: Chef Harpal Singh's Sheer Khurma recipe topped with kitchen tales!

It’s Eid today, and what’s better than making Sheer Khurma to enjoy the festival? We have an amazing recipe for this delicious delicacy, exclusively on mid-day.com, by everyone’s favourite chef, Harpal Singh Sokhi. As the chef shared his amazing recipe, he also discussed some interesting anecdotes about his life—from when he decided to become a chef, the time he got scolded by his mom, and more. Harpal Singh started the conversation by sharing that he never knew being a chef was a job. He joined a hotel management course with the intent to get a job. "In our time, I'll tell you honestly, I didn't have a choice in my career. I was the youngest in the family. So, what happened was my brother asked me to do a skill course. Because of that, I joined IHM. My neighbour had done IHM and got a job quickly. I thought this course was good because you can get a job quickly. After joining, I found out that in IHM (Hotel Management), there is a stream called Chef, within Hotel Management, which you can choose. And I chose it with the intent to get a job," Singh shared. Further in the conversation, when we asked him if he ever got scold for making something a certain way, he shared a fun story: "Once, my father said, 'We don't have that much money to go to 5-star hotels and eat. Why don't you cook something at home and feed us? Something that even we feel is 5-star hotel food.' I replied, 'Yes, of course, I'll feed you.' At that time, I had just left hotel management. In the first year, I was working as a trainee cook at Oberoi's. I told them, 'I'll cook and feed you.' So I started cooking. After a long time, my father told me, 'It is Sunday, you entered the kitchen at 11, it's already 1, where is your food?' I replied, '5-star hotel food takes time to cook.' After a long time, I filled a big bowl with paneer makhni and put it on the table. It was almost two hours. Then my father said, 'It's okay, but with what will we eat it?' I replied, 'I didn't make anything else.' Then my mom said, 'Don't come into my kitchen until you become a good chef.'" Chef Harpal Singh Sokhi’s Sheer Khurma recipe Ingredients - Ghee - 4 spoons - Almonds - 1 tablespoon - Cashews - 1 tablespoon - Cuddapah almonds (Chironji) - 1.5 tablespoons - Raisins - 1 tablespoon - Wheat vermicelli - Desiccated coconut - Milk - Sugar - 1.5 tablespoons per bowl - Cardamom powder - 1 teaspoon - Cocoa powder - 1 teaspoon Process Take 4 spoons of ghee and roast the almonds, cashews, and Cuddapah almonds (Chironji). Remove them and set them aside in a bowl. Shallow fry the raisins and set them aside. Roast the wheat vermicelli, then add about 2 tablespoons of desiccated coconut. After stirring it well, add milk. Once it starts boiling, add sugar and cardamom powder. Once the mixture reaches the desired consistency, add cocoa powder and stir it well. Switch off the flame and let the dish cool down. It looks like after giving up sugar for a year, Kartik is now ready to seize any opportunity to enjoy delicious food. Recently, Kartik took to his Instagram and shared a video of him entering a restaurant and enjoying the view of the waiter decorating his thali with a yummy Gujarati food. About Chandu Champion Helmed by Kabir Khan, 'Chandu Champion'  is based on the life of India’s first Paralympic gold medalist, Murlikant Petkar, who won the 50 metres freestyle swimming competition at the 1972 Summer Paralympics in Heidelberg, Germany. During the 1965 India-Pakistan war, Petkar, a soldier of the craftsman rank in the Corps of Electronics and Mechanical Engineers (EME) in the Indian Army, suffered debilitating injuries that rendered him paraplegic. He took to swimming as recommended by the doctor, and eventually represented India internationally. For the film, Kartik has also shot for an 8-minute-long war scene. Meanwhile, on the work front, Kartik Aaryan will be seen in the third installment of 'Bhool Bhulaiyaa 3', 'Aashiqui 3', and will begin shooting for Karan Johar's Dharma Productions epic war saga directed by Sandeep Modi.

Sharvari opens up about mouthwatering Konkan cuisine experience on 'Munjya' set

Sharvari, who is currently engrossed in the promotion of her upcoming comedy-horror film 'Munjya,' recently shared her culinary experiences while shooting for the movie in the Konkan region. Speaking to ANI, Sharvari shared, "We shot in two places. We had such tasty food at both places that I can't even tell you. Especially the beaches are so pristine that you should explore such beaches in India. This is something that I would like to tell the viewers because I had never seen such beaches before. I felt very proud that such beaches are in our country. Talking about the food, when we went there, it was mango season. So, we had so much of aam ras that I think we've had enough for the whole year." Speaking about her character in 'Munjya,' Sharvari shared, "My character is a modern girl who wants to achieve her dreams and prioritizes them above everything else, which I think we all do nowadays. Many girls will relate to my character. Her dating life is also quite confusing, so many girls will relate to that too. A very beautifully written character." Starring Sharvari, Mona Singh, Abhay Verma, and Sathyaraj, the film helmed by Aditya Sarpotdar revolves around 'Munjya,' a rooted myth from the world of Indian belief and cultural system. Recently, the makers released the teaser. The teaser introduces Munjya, a CGl character, to the audience in a remote forest. Munjya springs into action after hearing the popular song 'Munni Badnam Hui' from Bollywood superstar Salman Khan's 2010 blockbuster film Dabangg. Dino Morea’s summer fitness secrets: 'My meals are home-cooked'

Actor Dino Morea, who was recently seen in the Malayalam film ‘Bandra’, has shared insights into his fitness regimen and how he powers through the terrible Mumbai summer which peaks in the month of May. The actor told IANS that he focuses 50-60 per cent on weight training and mixes it up with sports to leverage the cardio. He said: “My weight training is 3-4 days a week. For me, cardio is about playing a sport and that would be two days a week.” Dino said that he focuses on maintaining the electrolyte balance in summer as the body tends to lose electrolytes during workouts. He told IANS: “For the summer, because it is really hot and humid, I make it a point to have more electrolytes because you tend to lose out on electrolytes when you workout. With regard to the diet, I’m fairly consistent with what I eat. My meals are home-cooked, lighter in nature and more vegetarian.” Recently, the actor installed fitness stations in Mumbai at public places which people of the city can access free of cost. The actor described the initiative as a way of giving back to the city. Sharing the inspiration behind installing fitness stations, he said that he wanted people to have a place which they can access publicly and stay fit. The actor told IANS: “Whenever I used to go for a walk or a run on the streets of Mumbai, because that’s the only space you have given the space crunch in the city, all one could do was run, skip or walk. The streets never really had anything for functional training. When you travel abroad, you see a lot of such stations in public places. I thought why not have something here as well.” The actor came up with the design all by himself, sought permission, and raised money for it. “I went about designing, and tried to figure out how to get permission. Got the permission, I raised money, and set it up, all on my own, nothing from anybody else, and publicly free of cost,” he added. Talking about hydration, Dino said: “Hydration is the most important thing along with electrolytes. I drink 4-5 litres of water a day. Take plain water, add a bit of Himalayan pink salt. Bollywood actress and a foodie by heart, Shraddha Kapoor, on Wednesday, shared a glimpse of her '7-course syllabus' on social media, which were seven different types of meals. Shraddha looked gorgeous in an off-white coord set with open hair and minimal makeup. From planted chicken breast and steak to green coconut curry and wasabi carrot, here’s everything that Shraddha ate off the vegan menu.  1st course: A green curry broth with ginger kombucha, iced coconut pearls and coconut foam, coconut powder baiser and roasted rice and salt, red chili, pumpkin puree, red onion puree, apple, kaffir lime and coriander oil.  2nd course: Steamed celeriac, Oatly cuisine beurre blanc and mayonnaise made from "mimi ferments" miso, celeriac purée made with Oatly cuisine, habanero, zest and jelly of mandarin, mustard oil, turnips marinated in curcuma, cooked ginger.  3rd course: Sweet and sour stock from carrot and mongo and coriander, carrot cooked in the oven, turned over in starch flour and deep fried in a wok, marinated with wasabi mayonnaise and deep fried green rice.  4th course: Braised and grilled topinambur in jus from mimi ferments shoyu and jalapeño, salad of marinated apple, celery and shiso, shiso leaves & oil, roasted black quinoa, lime juice, pea purée.  5th course: With green Thai pepper, toasted gluten-free bread, salad of marinated and pickled beetroot, Chioggia beetroot, raspberry cornichons, oatly cream cheese pearls, and chervil purée, green pepperoni cream.  6th course: Panfried planted chicken breast, jus and crunch and oil with green and red Sichuan pepper, jelly and marinated currants, cabbage purée made with Oatly cuisine and fried cabbage, jelly of sudachi.  7th course: Fresh nam dok mango and Oatly Cuisine cremeux and sorbet, chili salt, lettuce & cucumber sauce, vanilla lime sorbet, Oatly Cuisine ice with roasted rice and lemongrass.  Shraddha is often seen giving a peek into her daily personal and professional updates. Manoj told IANS, "These are the characters that people have seen many times. Characters belonging to the North India region. This culture has been showcasing for many years, but, yeah there has been a two-decade gap, we concentrated a lot on urban stories. Somewhere these stories and characters were left behind." "And that is why we are all very excited that after a long gap, the people of North India will get their representation on the screen, their culture, the relationship they are very familiar with, the culture that belongs to them. 'Bhaiyya ji' me hamare 'mitti' ki khusboo hain. When you make your film with all your heart, that is shown on the screen too. 'Hamne isko pure garv ke saath banaya hain'," said the actor, last seen in 'Silence 2'. Bajpayee, who made his feature film debut with a one-minute role in the 1994 action drama 'Drohkaal', and a minor role as a dacoit in Shekhar Kapur's 'Bandit Queen', shared he was not even aware that he had completed 99 films to date.
