Thukpa
The Eastern Express, a month-long menu at Permit & Co, inspired by the food, ingredients and landscapes of the Northeast and Eastern Himalayas. The menu includes recipes sourced from Nagaland, Manipur and Assam.
"We've sourced ingredients like bamboo shoot, also called bastenga locally from Nagaland, yongchak or stink bean pickle from Manipur, bhut jolokia
(King Chilli or Raja Mircha) from Nagaland, pineapple and timur pepper from Assam, and black rice or Chak-Hao from Manipur. We've taken a few liberties with the region's cuisine, and you'll see that across the menu," founder Aditya Hegde tells us.

Thukpa
A whole broth is an all-year delight. The pork thukpa has a DIY serving of al dente Tibetan noodles with pork, a mildly spiced peppery broth in ginger, garlic and soy, and a side of fried garlic, onions, peanuts. Our seriving is warm, filling and flavour-packed.

A traditional street snack from Kalimpong, it has its origins in Tibet, it has jelly-like pieces of steamed green gram cubes. This comes topped with tomato chutney, turmeric and Timur pepper. The crunch of Wai Wai makes it apt for a bar snack.

A refreshing drink with the earthiness of vodka infused with black rice, tarty flavours of in-house plum soda made with white plums shines out.

Kewa Datshi
This raked up food memories of the Swiss rosti, and a local churpi cheese rendition from Arunachal Pradesh. This creamy Bhutanese stew, warm cheese curry with potato rosti and onions, hits all the right notes.

This Tibetan fried snack is stuffed with juicy minced chicken,and pan-fried. We have it with two dips - a runny spiced coriander condiment, and a tomato with jolokia chili chutney.
