Innovation reigns at this new Lower Parel restaurant

A new, playful restaurant, Byblos Food & Wine, has just got its kitchen steaming with innovative dishes inspired by the Levantine cuisine

Another eatery has emerged on the city’s culinary map in the form of Byblos Food & Wine, a new diner in Lower Parel that offers Levantine cuisine to Mumbai gourmands. Inspired by the idea of fresh, organic food, the restaurant taps into the methods of the Turkish-Ottoman empire cuisine. Started by sister duo Vidhi and Nidhi Behl, Byblos has a handcrafted menu that is experimental and weaves in many unique dishes while focussing on a large patisserie spread.

Byblos hopes to imbibe a playful atmosphere to their serious approach to food. Nidhi, owner and chef at the restaurant shares, “We took the origins of Levant food, borrowed a little from the Africas and turned the cuisine on its head.” Dishes such as Classic Tandoori Chicken with an African accent: African Berber Spiced Tandoori Chicken, Peri Peri Rock Corn with Bacon Dust, Jalapeno Oil Prawns, Whiskey & Green Harissa Chicken with Porcini Mushroom Dust, Tahini & Turkish Tarator Hammour (Reef Cod) and Organic Baby Lamb Shawarma make the chef’s hold on Arab-inspired dishes quite evident.

There is a lot on the platter for lovers of greens as well. Chef Nidhi Behl has underscored the umami flavour to give an edge to its vegetarian spread. Think, umami-rich Hay-smoked Mushroom in an African Biryani or a savoury Mustard and Sriracha Ice cream crowning atop a traditional Turkish eggplant dish; and more of such ilk that will astound the palate. Neo-traditional dishes also include a Fried Jalapeño Popper Sandwich, Caponata Salad with Labneh Mousse & Olive Dust.

Giving the city’s dessert variety a major shot in the arm, Byblos sates the sweet palate with a twist. Olld favourites like the Ganache Cake or a Chocolate Mink are whipped up with earl grey flavours. For deconstructed dandies, there is a lemon tart turned inside out called Sparkles & Things. Byblos also boasts of an “unbirthday cake”. The mind-boggling layered dessert has five types of vanilla, a creme brûlée filling and a candle to celebrate everyday of the year.
